What's most comfortable and easiest class to take to 80 without stress/and easy on hands and able to learn/understand mechanics well even from normal > hard

Depends what you find fun and comfortable.
In my opinion though, Red Mage and Bard are probably the easiest. Their damage rotation is straightforward and simple.
